Everyone stop what you’re doing and make this pumpkin flax mug cake/pudding/bread creature
I don’t even know how to describe it because it’s a hybrid of all of those things. Imagine like, a very moist cake, almost with the texture of bread pudding. It’s not firm enough for a bread, it’s just..puddingy. But still cake like. Help I literally don’t have words but it’s amazing.
This makes two and they were beyond filling (I mean I also had it with some yogurt but anyway) so feel free to halve the recipe for a more, er, acceptable serving size.
Pumpkin Spice Flax Puddingbreadcake:
-1/2 cup pumpkin (canned, obviously not pumpkin pie filling duh who do you think I am, the pure pumpkin)
-1/4 cup/46g flax meal
-2 tsp baking powder
-1 tsp cinnamon
-Dash of nutmeg/cloves/other pumpkiny spices, stevia to taste
-2 tbsp sunflower seeds, optional, but they looked really cute baked into the top
Mix all ingredients minus sunflower seeds. I used two small ramekins, put 1 tbsp sunflower seeds in the bottom of each, and put half the batter in each ramekin. Then microwave for 1 minute and 30 seconds.
Flip onto plate, and then smother in melted peanut butter. Realize too late that now no one can see the cute seeds baked into the top. Whatever though now you have moist pumpkin cakes with peanut butter and life is excellent.
